Making Tacos using left-overs

Have you ever wondered what to do with those left-overs when you fix that big Sunday dinner meal, Well that use to be a problem at my house also why because nobody in my family likes to eat left-overs why I don't know, but I have stop that by reconstructing what we had for dinner so my family will eat and enjoy these tasty left-overs.
What I have done is turn my Sunday dinner which was slow roasted chicken in to a savory taco. Most of the ingredients I have are already in my house so this makes this meal a whole lot easier things like cheese, tomatoes taco shells, rice,corn and sour cream, now again these are the things me and my family like but you can add what ever you want.

I'm telling you your family is going to love this treat and they are easy fun to make.
Chicken Tacos
1 leftover slow roasted chicken - deboned and shredded
1 pkg 12oz of white or brown rice ( I use steamer bag rice )
1 cup of frozen sweet corn
1/2 teaspoon salt
1 cup of shredded cheese ( I use shredded quesadilla cheese )
1 jar 16oz verde enchilada sauce
1 pkg 12oz crisp taco shells
sour cream (optional)
Directions
Pre-heat oven to 450 degrees, spray a 13x9 baking dish with cooking spray. Mix all ingredients except taco shells into a large bowl. Spread evenly into baking dish.
Bake at 450 degrees for 20 minutes, or until bubbling, let stand for 5 minutes. Spoon into crispy corn taco shells and serve with sour cream.
