With Halloween right around the corner we all know that little kiddies every were are going to be searching for some tasty treats like all kinds of candy, cookies and apple taffies but what I like to give my kids for a Halloween treat are some tasty yummy cupcakes that they really love each and every year.
So today I want to share with you a recipe for some tasty pumpkin cupcakes with some cream cheese frosting that will make your mouth water for more and more after every bite.
Pumpkin Cupcakes With Cream Cheese Frosting
1 cup of all-purpose flour1 tsp baking powder
1/4 teaspoon of baking soda
1/2 teaspoon of ground cinnamon
1 pinch of sea salt
1/2 cup of butter, softened
3/4 cups of sugar
2 medium eggs
1 cup of cooked and mashed pumpkin
1/4 teaspoon of vanilla extract
To begin preheat oven to 350.
Using a mixing bowl, whisk together flour, baking powder, baking soda, cinnamon, salt, and set aside. Cream butter and sugar until light and fluffy, about 2 minutes; add eggs one at a time, beating on low after each addition, then add mashed pumpkin and vanilla. Add flout mixture; stir until combined. Spoon batter into baking cups. Bake 12-15 minutes, or until golden brown. Let cool before frosting. Recipe doubles easily. Makes12 cupcakes.
Cream Cheese Frosting
1 package (8oz) of cream cheese, room temperature
1 stick margarine, room temperature
4 teaspoon of pure vanilla extract
4 cups of powdered sugar
To get started.
Cream together cream cheese and butter until smooth, add vanilla and powdered sugar, then mix until smooth. then frost each cupcake.
