Too hot to cook, When the temperatures ris, just skip the stove, pass by the oven and whip up a quick meal. Simply purchase a rotisserie chicken and add a few fresh ingredients and dinner can be on the table in minutes, Here is a delicious Chili-Lime Rotisserie Chicken Wrap everyone will ove, and it will keep you and your house cool.
Chili-Lime Rotisserie Chicken Lettuce Wrap
Recipe
1 rotisserie chicken (about 2 1/2 puonds) skins and bones removed and shredded
1 clove of garli, finely minced
1 tablespoon grated ginger
1/3 cup Asian-style sweet chili sauce
2 tablespoons fresh-lime juice
2 tablespoon chopped cilantro
1/2 english cucumber halved lengthwise, seed and cut into matchstickes
1 red bell pepper, thinly sliced
1 cup of fresh bean sprouts
1medium carrot, cut into thin strips
1 small red onion, halved and thinly sliced
1 head of boston lettuce
Place the shredded chicken garlic and gingerin a shallow microwave-safe dish. Cover and microwave on high until the chicken is heated through for 1 1/2 to 2 minutes, add the chili sauce, lime juice and clantro and toss to coat the shredded chicken.
Arrange the chicken and cucumber, red bell pepper, bean sprouts, carrots, red onion and lettuce on a serving platter. Let everyone assemble their own wraps, then enjoy, you can add a little squeeze of some more lime juice if you like thats what I do.
These wraps are really tasty and good to eat i hope everyone who tries this recipe likes them as much as I do, plus they are really too........but don't tell your children ..just let them think of the good flavor they are getting in every bite.
