Osso-Buco Style Chicken
Classic Italian Ossco-Buco is made with veal shanks braised in a flavorful tomato sauce. In my version, I made the same kind of sauce but substituted skinless chicken thighs for the shanks, so this makes this dish lighter and more affordable.
2 tablespoons vegetable oil
8 large chicken thighs ( 2 1/2 pounds ) skin and fat removed
1/2 teaspoon salt
8 ounces carrots, peeled an finely chopped
1 lagre onion, dice
1 large stalk celery, finely chopped
1 can 14 1/2 to 16 ounces stewed tomatoes
chopped parsley
grated lemon peel
1. In 12-inch skillet, heat oil over medium-high heat until very hot. Add chicken thighs and salt and cook until chicken is golden brown on all sides, with a slotted spoon transfer chicken to a bowl.
2. Add carrots, onions, and celery to the skillet and cook until lightly browned. Return chicken to the skillet. Stir in stew tomatoes; heat to boiling over high heat. reduce heat to low; cover and simmer until chicken loses its pink color throughout, about 25 minutes. Sprinkle with chopped parsley and grated lemon peel.
This easy dish only is 330 calories , and only takes 10 minutes to prep and 40 minutes to cook so come on and try this you will really love it,
This fine dish will feed 4 people.
